Ingredients
  

  • 4 cups Spinach chopped
  • 250 gm Potato chopped to med-large cubes
  • 1 nos Tomato large chopped
  • 3 cloves Garlic
  • 2 nos Green chilli
  • 1 nos Onion medium size
  • ¼ tsp Turmeric powder
  • ½ tsp Chilli powder
  • to taste Salt
  • TADKA/TEMPERING
  • 1 tbsp Ghee
  • 1 tsp Cumin seed
  • 1/4 Onion thinly sliced
  • 3 cloves Garlic thinly sliced

Method
 

  1. Crush garlic and green chilli using a motar and pestle. On medium low flame, add 1 tbsp oil followed by the crushed garlic and chilli and fry for few seconds. Add in the onion and saute until it becomes translucent.
  2. Add in the potato and fry followed by turmeric powder, chili powder, salt to taste and fry for approx. 4 mins.
  3. Next, add in the tomatoes and the spinach and mix well. Let the spinach reduce.
  4. Cover and cook until the potato is almost done.
  5. For the tadka, Heat up 1 tbsp ghee, splutter 1 tsp cumin seeds and fry 1/4 of a large onion and 3 cloves of garlic thinly sliced until golden brown.
  6. Add the tadka into the potato and cook for 3-4 mins. Delicious and healthy aloo palak is ready to eat with hot rotis/chappatis.
