½cupWater or Milk
¼cupChopped walnuts or Chocolate chipsoptional
Instructions
Preheat the oven to 180°C (350°F) and prepare a loaf pan (8.5 in X 4.5 in) by greasing with oil and lining with a parchment paper (or oil the pan and dust with flour thoroughly). Blend the bananas and the Jaggery in a blender.
Transfer the blended mix into a bowl and mix in the oil, vanilla essence and vinegar.
Sieve in the dry ingredients into the wet ingredients.
Mix well, adding the water or milk at this point. (Do not over mix. Over mixing will result in a tough bread.)
Mix in the walnuts or chocolate chips. Top with 2 tbsp of chocolate chips
Bake in the preheated oven for 30 - 35 mins. A skewer inserted in the center should come out clean. Check at 25 - 30 mins to prevent over baking
Let the loaf cake cool down for 15 mins before carefully removing the parchment paper. Cut into thick slices and enjoy
