Healthy Vegan Chocolate Banana Bread | Eggless Ragi Chocolate Banana tea time cake

Ingredients
  

  • ¾ cup Jaggery/coconut sugar tightly packed
  • 2.5 nos Ripe Banana
  • ¾ cup Ragi flour (millet flour) can substitute with whole wheat flour
  • ½ cup Unsweetened cocoa powder
  • 1 tsp Baking powder
  • ¼ tsp Baking soda
  • ¼ tsp Salt
  • ¼ cup Vegetable oil/Virgin coconut oil flavorless
  • 1 tsp Vanilla essence
  • 1 tsp Vinegar
  • ½ cup Water or Milk
  • ¼ cup Chopped walnuts or Chocolate chips optional

Instructions
 

  • Preheat the oven to 180°C (350°F) and prepare a loaf pan (8.5 in X 4.5 in) by greasing with oil and lining with a parchment paper (or oil the pan and dust with flour thoroughly). Blend the bananas and the Jaggery in a blender.

  • Transfer the blended mix into a bowl and mix in the oil, vanilla essence and vinegar.

  • Sieve in the dry ingredients into the wet ingredients.

  • Mix well, adding the water or milk at this point. (Do not over mix. Over mixing will result in a tough bread.)

  • Mix in the walnuts or chocolate chips. Top with 2 tbsp of chocolate chips

  • Bake in the preheated oven for 30 - 35 mins. A skewer inserted in the center should come out clean. Check at 25 - 30 mins to prevent over baking

  • Let the loaf cake cool down for 15 mins before carefully removing the parchment paper. Cut into thick slices and enjoy
