Healthy Granola Bar

Ingredients
  

  • cups Rolled oats(not quick oats)
  • 2 tbsp Brown sugar
  • ¼ cup Desiccated coconut
  • 1 cup Dry fruit mix I used 1/2 cup chopped almonds,1/4 cup chopped raisins and 1/4 cup cranberries. You can use any combination you like, even some chocolate chips
  • ¼ tsp Salt
  • cup Vegetable oil/Virgin coconut oil/Butter
  • cup Honey
  • 1 tsp Vanilla essence/extract

Instructions
 

  • Line a 9” x 9” square pan with 2 criss-cross sheets of parchment paper leaving extra overhang on all sides. Grease the parchment paper thoroughly with butter.
  • Mix the rolled oats, desiccated coconut, brown sugar, dry fruits, salt in a mixing bowl.
  • In another bowl or jug, mix vegetable oil, honey, vanilla essence until homogeneous.
  • Add the liquid ingredients into the oats mixture and coat everything thoroughly.
  • Transfer the granola mix into the prepared pan, level with a spatula and firmly press it down with a measuring cup. It's very important to firmly press everything down.
  • Bake in a 325°F preheated oven for 30 mins. After baking, lightly press it down again and let it cool down completely (for 1 hour). If you try to cut the bars before cooling down, it will crumble.
  • Carefully remove the parchment paper.
  • Slice with a sharp knife into 12 bars. You can also cut it into square shape.
  • Drizzle some melted chocolate on top if desired. I used some dark chocolate.
  • Healthy granola bars are ready to Enjoy!!

Notes

  • Make sure you are using parchment paper and not wax paper or foil as they will stick to the bar.
  • The granola bars will keep in an airtight container or plastic Ziploc bag on the counter for up to 1 week with pieces of parchment or waxed paper between layers to keep them from sticking, or wrap them individually in parchment or waxed paper and keep them in the freezer in a large Ziploc bag for up to 2 months.
  • Instead of vanilla essence you can flavor with cinnamon powder.
  • Some suggestions for the 1 cup of dry fruits: 1) Mini chocolate chips and hazelnut.    2) Pistachio, cranberries, pumpkin seeds. 3) Walnuts, dried pineapple and coconut chips/flakes. The options are endless.
