Shepherds Pie

Ingredients
  

For Meat layer

  • 2 tbsp Olive oil
  • 500 gm Minced beef / Lamb
  • 1 cup Onion finely diced
  • 1 cup Carrot finely diced
  • 2 cloves Garlic minced
  • 1 tbsp Worcestershire sauce optional
  • 2 tbsp Flour
  • 1 tsp Paprika powder can use ½ tsp chili powder instead
  • ½ tsp Pepper powder
  • to taste Salt
  • 2 tbsp Tomato paste
  • cup Beef stock I used a beef bouillon cube dissolved in water
  • ½ tbsp Dried Parsley or 1 tbsp Fresh Parsley
  • ½ tsp Dried Thyme or 1 tsp Fresh Thyme
  • ½ tsp Dried Rosemary or 1 tsp Fresh Rosemary
  • 1/2 cup Frozen peas

For Mashed Potato layer

  • 1 kg Boiled potatoes
  • 2 tbsp Butter
  • to taste Salt & Pepper
  • ½ tsp Garlic powder optional
  • ¼ cup Cheddar/Parmesan cheese for mash
  • 1/3 cup Milk
  • 1 nos Egg yolk optional
  • ¼ cup Cheddar/Parmesan cheese for topping

Instructions
 

  • Into a pan on Med-High heat, pour in olive oil. Brown the mince meat/lamb. If using lamb you may need to drain some excess oil before proceeding. Add onions, carrots, celery, garlic.
  • Continue to brown the meat and veggies. Browning is flavour.
  • Add paprika powder, pepper powder and salt. Saute for 2 mins. Then add Worcestershire sauce & 2 tbsp flour. Cook for 2 mins. Add tomato paste and cook until a roasted smell comes.
  • Pour in beef stock, dried or fresh herbs. Mix in frozen peas and simmer for 4-5 min. Check for seasoning.
  • Transfer the meat mixture into an ovenproof dish 7 inch x 11 inch and allow to cool a bit.
  • In the meantime, mash the boiled potatoes.
  • Add butter and season with salt, pepper, garlic powder. Add in milk and 1/4 cup cheddar or Parmesan cheese. You can also add the yolk of an egg for a richer mash.
  • Layer the mash onto the meat mixture and level.
  • Score on the mash using a fork and top with 1/4 cup cheddar cheese.
  • Bake in a 400F preheated oven for 20 mins or until slightly golden brown on top.
  • Serve hot and Enjoy this delicious and comforting Shepherds pie!!

Notes

  • Use minced chicken or turkey instead of beef.
  • Use finely diced french beans if you are not a fan of green peas.
  • If you don’t prefer a thick layer of mash you can reduce the quantity of potatoes to 800gm.
  • If you prefer a gravy-like meat mixture increase the quantity of beef stock accordingly.
  • Assemble the dish in advance and refrigerate for up to 2 days and bake at 400F for 30-40 mins when needed.
