Prepare the sauce by mixing together the ingredients for the sauce and keep aside.
Heat some vegetable oil for frying. Combine together the ingredients for the batter and add in the shrimps and mix until it’s well covered with the batter. (You can add a pinch of orange food color, if you want a brighter color.)
When the oil gets heated, fry the shrimps for 5-6 minutes or until the coating turns golden. Drain them from the oil and put them in the bowl with the sauce while still hot.
Toss them until nicely covered with sauce. Transfer them to a serving plate or cocktail glasses for individual serving with lettuce leaves.
