Method
- Layer the ingredients except for khoya and chopped nuts in the order mentioned above in a 2 or 3 ltr pressure cooker.

- Cook on high flame for 5 mins or 10 whistles whichever comes first. Release pressure. [ The timing/whistles depend on the moisture content of the carrots. Go by your nose. Wait for a faint burnt smell.]

- Cook for 2 mins adding 1/4 cup crumbled or grated Khoya until any remaining syrup is reduced. Mix in chopped nuts.

- Quick and delicious carrot halwa is ready to serve. Enjoy!!

Notes

- You can use any type of Gajar for this recipe. Beetroot and winter melon can be good substitutes.
- The sugar can be substituted for jaggery or any sweetener of your choice.
- Khoya can be substituted with paneer or condensed milk. Reduce sugar if using condensed milk.
