No Bake Healthy Peanut Butter Chocolate Bar

Ingredients
  

  • 1 cup Natural peanut butter
  • 1/3 cup Honey/Maple syrup
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 3 cup Puffed rice
For topping
  • 1 cup Semi-sweet or dark chocolate chips
  • 1 tbsp Virgin coconut oil or any flavorless oil
  • Flake sea salt Optional (to taste)

Method
 

  1. Add peanut butter, honey, vanilla extract, cinnamon, salt into a small saucepan and combine the mixture on low heat until everything is warm and melted.
  2. Pour in the warm mixture onto the puffed rice and mix well until combined.
  3. Transfer the mixture into an 8 x 8-inch square baking pan lined with parchment paper. Level and press it down using hand or spatula.
  4. Add semi-sweet chocolate or dark chocolate and virgin coconut oil into the same saucepan, melt on low heat.
  5. Spread evenly on top using a spatula.
  6. Set in the refrigerator for 20 min or 45 min at room temperature.
  7. Cut into 9 - 18 pieces as desired and top with sea salt flakes.

Notes

  • You can use store-bought creamy peanut butter without added sugar for this recipe.
  • Instead of puffed rice, you can also use puffed brown rice cereal, puffed millet, puffed amaranth, etc.
  • Use chopped-up dark chocolate bar of your choice instead of the chocolate chips.
  • Store these in the refrigerator.
