Mix the orange juice with the dry fruit and Microwave for a minute. Let it soak for 15 - 20 mins.
Preheat oven to 170 C(340F).
Sift the flour and baking powder twice and keep aside.
Cream the butter and sugar until light, fluffy and pale.
Mix in the eggs one at a time followed by vanilla extract and ground cloves.
Add in the flour mix in batches keeping aside some to coat the dry fruit. Scrape down the bowl using a spatula.( Do not over mix)
Divide the batter into 2 prepared loaf pans or 1 large pan and level with a spatula.
Bake in a 170F preheated oven for 50 - 70 mins or until a toothpick inserted in the center comes out clean (time depends according to the size of the pan)
Cool in the pan for 10 mins, then demold and let it cool completely on a wire rack.
Soft and tender light fruit cake is ready to enjoy and share with others.
