Have not soaked dried fruit in advance for a Christmas cake? Don't worry we got you covered with this last-minute Light fruit cake recipe without compromising the flavors' of a presoaked fruit cake.

Christmas Light Fruit Cake | Tasty Christmas Gift

Ingredients

  • 300 gm Mixed dried fruits approx. 2 cups
  • 1/2 cup Orange juice
  • 250 gm All purpose flour/Maida (2&1/4 cup) 2 and 1/4 cups
  • 2 tsp Baking powder
  • 250 gm Unsalted butter room temperature
  • 170 gm Fine granulated sugar
  • 4 nos Large egg room temperature
  • 1 tsp Vanilla extract
  • 1/4 tsp Ground cloves
  • 1/4 tsp Almond essence (if using almond essence, use only 3/4 tsp vanilla extract)

Instructions

  • Mix the orange juice with the dry fruit and Microwave for a minute. Let it soak for 15 – 20 mins.
  • Preheat oven to 170 C(340F). 
  • Sift the flour and baking powder twice and keep aside.
  • Cream the butter and sugar until light, fluffy and pale.
  • Mix in the eggs one at a time followed by vanilla extract and ground cloves.
  • Add in the flour mix in batches keeping aside some to coat the dry fruit. Scrape down the bowl using a spatula.( Do not over mix)
  • Divide the batter into 2 prepared loaf pans or 1 large pan and level with a spatula.
  • Bake in a 170F preheated oven for 50 – 70 mins or until a toothpick inserted in the center comes out clean (time depends according to the size of the pan)
  • Cool in the pan for 10 mins, then demold and let it cool completely on a wire rack.
  • Soft and tender light fruit cake is ready to enjoy and share with others. 

Notes

  • Dried fruits mix: 100 gm black raisins, 50 gm golden raisins, 50 gm candied red and cherries, 50 gm apricots, 30 gms dates, 20 gms dried pineapple. (You can use any combination of dried fruits and nuts you prefer). Chop the raisins into 2 and all dried fruits into small pieces.
  • You can replace 50 gms of the all-purpose flour with almond flour/meal for a nuttier flavor.
  • Grind the cloves along with a few tablespoons of the measured out sugar in a mixer grinder.
  • Can be baked in a 9 inch round pan.
  • Wait till the cakes are completely cooled to cut clean slices(I recommend slicing it the next day).

God became a man; he became the savior of sinners so these sinners could by faith become the children of God and inherit eternal blessings all for the glory of God. 

Jesus is the reason for the season because he brings hope to both bleak and bustling lives, for those of us in the darkness and those who’ve simply forgotten to slow down and enjoy the presence and love of our Savior.  

God sent us His son, through the virgin birth of Mary, to offer salvation for the world. The Christmas season is meant to celebrate not only the birth of Jesus but the gift of His life, death, and resurrection. Christ, the hope of the world, loves you and I. He’s available when we simply call on His name. He forgives our sins and assures us of a future in heaven. He comforts and brings hope.

Why not celebrate Him and His birth and make Jesus the reason for the season?
