No Bake Healthy Peanut Butter Chocolate Bar

Ingredients
  

  • 1 cup Natural peanut butter
  • 1/3 cup Honey/Maple syrup
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 3 cup Puffed rice

For topping

  • 1 cup Semi-sweet or dark chocolate chips
  • 1 tbsp Virgin coconut oil or any flavorless oil
  • Flake sea salt Optional (to taste)

Instructions
 

  • Add peanut butter, honey, vanilla extract, cinnamon, salt into a small saucepan and combine the mixture on low heat until everything is warm and melted.
  • Pour in the warm mixture onto the puffed rice and mix well until combined.
  • Transfer the mixture into an 8 x 8-inch square baking pan lined with parchment paper. Level and press it down using hand or spatula.
  • Add semi-sweet chocolate or dark chocolate and virgin coconut oil into the same saucepan, melt on low heat.
  • Spread evenly on top using a spatula.
  • Set in the refrigerator for 20 min or 45 min at room temperature.
  • Cut into 9 - 18 pieces as desired and top with sea salt flakes.

Notes

  • You can use store-bought creamy peanut butter without added sugar for this recipe.
  • Instead of puffed rice, you can also use puffed brown rice cereal, puffed millet, puffed amaranth, etc.
  • Use chopped-up dark chocolate bar of your choice instead of the chocolate chips.
  • Store these in the refrigerator.
