Layer the ingredients except for khoya and chopped nuts in the order mentioned above in a 2 or 3 ltr pressure cooker.
Cook on high flame for 5 mins or 10 whistles whichever comes first. Release pressure. [ The timing/whistles depend on the moisture content of the carrots. Go by your nose. Wait for a faint burnt smell.]
Cook for 2 mins adding 1/4 cup crumbled or grated Khoya until any remaining syrup is reduced. Mix in chopped nuts.

You can use any type of Gajar for this recipe. Beetroot and winter melon can be good substitutes.
The sugar can be substituted for jaggery or any sweetener of your choice.
Khoya can be substituted with paneer or condensed milk. Reduce sugar if using condensed milk.
