This simple, healthy and delicious Pakistani style Aloo Palak Sabzi is a vegetarian dish where spinach and potatoes are cooked together with basic spices. Aloo refers to potatoes & palak to spinach. It can be eaten with roti, paratha, Poori or even with rice.

Aloo Palak

Ingredients

  • 4 cups Spinach chopped
  • 250 gm Potato chopped to med-large cubes
  • 1 nos Tomato large chopped
  • 3 cloves Garlic
  • 2 nos Green chilli
  • 1 nos Onion medium size
  • ¼ tsp Turmeric powder
  • ½ tsp Chilli powder
  • to taste Salt
  • TADKA/TEMPERING
  • 1 tbsp Ghee
  • 1 tsp Cumin seed
  • 1/4 Onion thinly sliced
  • 3 cloves Garlic thinly sliced

Instructions

  • Crush garlic and green chilli using a motar and pestle. On medium low flame, add 1 tbsp oil followed by the crushed garlic and chilli and fry for few seconds. Add in the onion and saute until it becomes translucent.
  • Add in the potato and fry followed by turmeric powder, chili powder, salt to taste and fry for approx. 4 mins.
  • Next, add in the tomatoes and the spinach and mix well. Let the spinach reduce.
  • Cover and cook until the potato is almost done.
  • For the tadka, Heat up 1 tbsp ghee, splutter 1 tsp cumin seeds and fry 1/4 of a large onion and 3 cloves of garlic thinly sliced until golden brown.
  • Add the tadka into the potato and cook for 3-4 mins. Delicious and healthy aloo palak is ready to eat with hot rotis/chappatis.

Food for Soul

..For all that is in the world, the lust of the flesh and the lust of the eyes and the boastful pride of life, is not from the Father, but is from the world. The world is passing away, and also its lusts; but the one who does the will of God lives forever. – 1 John 2:16,17

The first incentive John gives is that “if anyone loves the world, love for the Father is not in him” (verse 15b). In other words, the reason you shouldn’t love the world is that you can’t love the world and God at the same time. Love for the world pushes out love for God, and love for God pushes out love for the world.

“If you love the world, it will pass away and take you with it.”

In verse 17 he says,, “And the world passes away, and the lust of it.” Nobody buys stock in a company that is sure to go bankrupt. Nobody sets up house in a sinking ship. No reasonable person would lay up treasure where moth and rust destroy and thieves break in and steal, would they? The world is passing away! To set your heart on it is only asking for heartache and misery in the end.

That’s not all: Not only is the world passing away, but also the lusts of it. If you share the desires of the world, you will pass away. You will not only lose your treasure. You will lose your life.
