Tasty egg masala is a Chettinad style medium spicy curry from South India perfect for chapatis and appams.

Tamil Nadu Egg Kulambu | Tasty Egg Masala

Ingredients

  • 5 Boiled Eggs
  • 1 Large Onion thinly sliced (about 1 cup)
  • 1 Cup Tomato chopped
  • 4 Large Garlic Cloves minced
  • 1 Inch Ginger minced
  • 1 tsp Kashmiri Red Chilli Powder
  • 1 tsp Coriander Powder
  • ½ tsp Turmeric Powder
  • ½ tsp Tamarind paste
  • ¼ cup Coconut finely grated
  • 2 tbsp Jaggery/Sugar grated
  • Salt To taste
  • Coriander Leaves For Garnish
  • 3 tbsp Coconut Oil
  • SPICE MIX TO BE GROUND
  • ½ tsp Fennel seeds/Saunf/Perumjeerakam
  • ½ tsp Cumin seeds/Jeera/Jeerakam
  • ½ tsp Black Peppercorns

Instructions

  • Boil eggs, peel, make 4 small slits and set aside. Dry roast the spice mix ingredients and grind to a powder.

  • Heat oil in a pan and fry the eggs with turmeric powder for 2 mins. Keep eggs aside.Add the onions and fry till golden brown.

  • Add ginger and garlic and fry till raw smell goes. Then add tomatoes and cook till tomatoes are soft.

  • Add the ground masala powder, red chili powder, and coriander powder and fry for a few minutes followed by 1 cup of hot water and the coconut.

  • Mix in salt, tamarind, and jaggery and boil the gravy for 5 mins till a little thick. Add boiled eggs and simmer for 10 mins. If the gravy is too thick at this point, thin out as desired with a little hot water. Garnish with coriander leaves.

The Bible tells us to be anxious for nothing. Reality is….because we live in uncertain times, there will be times of worry and a sense of nervousness that can lead to anxiety.
I believe God knew we would have bouts of anxiety because the Bible says in, 1 Peter 5:7,
“ Cast all your anxieties on him, because he cares for you.”

So God KNEW we would have anxiety about circumstances in life and He wanted us to
know that all we had to do is cast them on Him and He would take care of everything else because He is a loving God that cares for us and what is going on in our lives.

It is normal to be anxious about finances, the future, the unexpected and what we can’t control but you know what?  You can’t control it, so let it go and let God just be God. God bless you.
