Sticky Toffee Banana Cake | Banana Caramel Cake
Ingredients
For Banana Cake
- 1 3/4 cup Flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- ¼ tsp Salt
- 3 nos Ripe Bananas approx. 1 cup mashed (can be slightly more)
- 1 stick Unsalted butter at room temperature
- ¾ cup Granulated sugar
- 2 nos Eggs Large
- 2 tbsp Fresh lemon juice
- 1½ tsp Vanilla extract/ essence
For Toffee Sauce
- 1 cup Light brown/Dark brown sugar
- 1/2 cup Heavy whipping cream add 1/4 cup more for runnier sauce
- 4 tbsp Unsalted butter approx. 56 gms
- ¼ tsp Salt
- 1 tsp Vanilla essence
Instructions
- Whisk together the flour, baking powder, baking soda, salt.
- Cream together the butter and sugar until nicely combined.
- Mix in the eggs followed by the mashed banana, lemon juice and vanilla essence.
- Add the flour and mix until just combined.
- Transfer the batter into the prepared baking dish(7-9 inches). Here I am using a 7-inch pan. Bake in a 350°F preheated oven for 40-45 mins (in a 7-inch pan). A 9-inch cake pan will take only 25 – 30 mins and an 8-inch pan approx 35 mins.
- In the meantime, Prepare the easy toffee sauce. In med-low heat bring to boil all the ingredients except the vanilla essence. Let it simmer for 5 – 8 mins until thick.(the syrup will thicken more on cooling).
- Once the cake is done, pour and spread 1/3 cup of the toffee and bake again for 5-6 mins until the sauce is bubbling. Let the cake cool for at least 30 mins before cutting.
- To serve : Serve the cake warm or at room temperature with warm toffee sauce and top it with slice bananas and roasted walnuts/pecans.

“A friend loves at all times and a brother is born to help in time of need.” – Proverbs 17:17
What does this mean? A friend has the responsibility to love through hard times but a brother/sister is born to help weather the storm of difficulties and misfortune. It is very easy to text someone and say, “I am praying for you”, when all they need is for you to be there and help out either physically or in any other way.
We don’t need a friend who sends the heart- emoji when our hearts are breaking from a failing financial situation or any other difficulty. We need a sister who would show up and assure us they care.
The qualities of a true friend or a beloved brother are best exemplified in the life of the Lord Jesus.
A true friend loves at all times.. in good circumstances and during times of greatest difficulty and hardships.. and Jesus reminded us that the greatest of all love is expressed when a friend is prepared to give up his own life for that of his friend – or to forego his own desires and needs
for the sake of his dearly beloved friend.
We need to remember a true brother moves closer when times get harder, and never leaves
or forsakes a friend, even when the trial lasts a lifetime.
Jesus Loves You! He is your friend that loves at all times and a brother, born to help in time of need. God be with you!!
