Sticky Toffee Pudding English Style

Sticky toffee pudding / Sticky date pudding is an all-time favorite dessert for everyone. Also a perfect make-ahead dessert for a gathering. The components can be made ahead of time and warmed at the time of serving, for a gourmet-style dessert to impress your family and friends.

Ingredients

FOR PUDDING

  • 170 gm Dates chopped and packed
  • 1 cup Water/Coffee
  • 1 tsp Baking Soda
  • 60 gm Butter
  • 1 cup Brown sugar / Granulated Sugar I used 1/2 cup each of light brown sugar & dark Muscovado sugar
  • 2 nos Eggs large
  • 1 tsp Vanilla essence
  • 1 cup All purpose four / Maida

FOR TOFFEE SAUCE

  • ½ cup Brown sugar
  • 1 cup Heavy whipping cream
  • 60 gm Butter
  • 1/4 tsp Salt
  • 1 tsp Vanilla essence

Instructions

  • In a saucepan, bring dates and water to boil.
  • Once the mixture boils, switch off the flame. Add baking soda, give it a stir and let it sit.
  • Transfer the dates mixture in to a mixing bowl. If using deep sauce pan, you need not transfer to a mixing bowl. You can mix the rest of the ingredients in that one pan for easy clean up :).
  • Add butter, brown sugar, eggs, vanilla essence and give it a good mix. Mix in the flour just until combined. Do not over mix.
  • Line the muffin mold with liners or grease and flour thoroughly. Divide the batter equally into 12-13 muffin cups.
  • For Stove Top Baking: Into a Kadai, with a perforated stand inside, which has been preheating for 5 mins on low flame, place the puddings to be baked. Bake for 15 – 18 mins.
  • Bake in the oven at 325°F for 15-18 mins. Check at 15 mins.
  • If using cupcake liners, make sure to bring the cakes to room temperature before removing the liners.
  • To prepare the sauce – On low flame, bring to a simmer, brown sugar, butter and heavy cream.
  • Switch off the flame, pour in vanilla essence, salt and mix.
  • To serve, warm the puddings in the microwave and pour some of the hot toffee sauce on it and top with vanilla ice cream(optional). Enjoy!!

Notes

  • The pudding can be baked in a 6 – 8 inch mold for 30 – 40 mins at 325F. Check if it’s baked at 25 mins as oven temperatures may vary. We don’t want to overbake the cupcakes.

When it comes to what is important in life, I believe our number one priority should be our personal relationship with God and then our family. Yet, we surround ourselves with multitudes of false idols. What are you worshiping? Where is your heart?

When you are moments from death, will you be able to look up to God and say “I’m ready?” Don’t waste any more time on gods that don’t last.
