No Bake Healthy Peanut Butter Chocolate Bar
Ingredients
- 1 cup Natural peanut butter
- 1/3 cup Honey/Maple syrup
- 1 tsp Vanilla extract
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 3 cup Puffed rice
For topping
- 1 cup Semi-sweet or dark chocolate chips
- 1 tbsp Virgin coconut oil or any flavorless oil
- Flake sea salt Optional (to taste)
Instructions
- Add peanut butter, honey, vanilla extract, cinnamon, salt into a small saucepan and combine the mixture on low heat until everything is warm and melted.
- Pour in the warm mixture onto the puffed rice and mix well until combined.
- Transfer the mixture into an 8 x 8-inch square baking pan lined with parchment paper. Level and press it down using hand or spatula.
- Add semi-sweet chocolate or dark chocolate and virgin coconut oil into the same saucepan, melt on low heat.
- Spread evenly on top using a spatula.
- Set in the refrigerator for 20 min or 45 min at room temperature.
- Cut into 9 – 18 pieces as desired and top with sea salt flakes.
- This healthy treat is sure to satisfy your sweet tooth this new year. Enjoy!!
Notes
- You can use store-bought creamy peanut butter without added sugar for this recipe.
- Instead of puffed rice, you can also use puffed brown rice cereal, puffed millet, puffed amaranth, etc.
- Use chopped-up dark chocolate bar of your choice instead of the chocolate chips.
- Store these in the refrigerator.
