Christmas Cake
Ingredients
- 125 gm Unsalted butter room temperature
- 125 gm Light/Dark Brown sugar loosely packed
- 3 nos Egg room temperature
- 60 ml Milk
- 1 tbsp Jam (any flavour, heaped) Can substitute with honey, orange marmalade
- 250 gm All purpose four
- 2 tsp Mixed spice powder I used 1 tsp cinnamon powder, 1/2 tsp cardamom powder, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg.You can also add 1/4 tsp ground ginger if you like)
- ½ tsp Vanilla essence optional
- 400 gm Dried fruits I used 150 gms black seedless raisins, 100 gms tutti frutti, 25 gms candied cherries, 100 gms chopped dates,25 gms chopped cashews
Instructions
- Prepare a loaf pan by applying butter and lining with parchment paper.
- Mix together the butter, brown sugar, milk, eggs, vanilla essence, jam. Use a wooden spoon or whisk to mix the ingredients. It's ok if the butter is not fully incorporated.
- Add in the all purpose flour, baking powder, mixed spice powder followed by dried fruits.
- Transfer the batter into the baking pan and level. Make a slight depression in the center using a spatula so that the cake doesn't dome up too much.
- Bake in a 170°C(325°F) preheated oven for approx. 1 hr 15 mins or more.It take upto 1 hr 45 min. The time will vary according to the size of the pan. A skewer inserted in the center of the cake will come out clean when done.
- Cool in the pan for 10 mins, then remove from the pan and cool completely before slicing.
Notes
- To prepare this recipe in an instant, you can also do all the mixing (liquid and dry) in a food processor or using a beater but make sure to mix in the dried fruits by hand.
- Other options for dry fruits are prunes, golden raisins, any nuts, dried pineapple, candied orange peel, etc.
- I have used light brown sugar because I prefer that. You can also use dark brown sugar, but it may give a strong taste.

The reason for this season of celebration is, always has been, and will be forevermore, that Jesus came to save his people from their sins. God became a man; he became the savior of sinners so these sinners could by faith become the children of God and inherit eternal blessings all for the glory of God.
Jesus is the reason for the season because he brings hope to both bleak and bustling lives, for those of us in the darkness and those who’ve simply forgotten to slow down and enjoy the presence and love of our Savior.
God sent us His son, through the virgin birth of Mary, to offer salvation for the world. The Christmas season is meant to celebrate not only the birth of Jesus but the gift of His life, death, and resurrection. Christ, the hope of the world, loves you and I. He’s available when we simply call on His name. He forgives our sins and assures us of a future in heaven. He comforts and brings hope. Why not celebrate Him and His birth and make Jesus the reason for the season?
