WHAT'S SPECIAL

Mandazi are East African donuts. They are crispy on the outside and soft on the inside. Usually this tasty snack is eaten with tea (chai) or coffee. So let's prepare Mandazi for this evening.

Mandazi is a childhood favorite of mine which my mother used to lovingly make for me. Hope you will enjoy the recipe and try it out for your family.

East African Mandazi | Tasty African Doughnut

Servings 6 people
Prep Time 10 mins
Cook Time 10 mins

Ingredients

  • 2 cup All purpose flour maida
  • 2 tsp Baking powder
  • ¼ tsp Salt
  • ½ cup Fine granulated sugar
  • 1 Egg large
  • ¼ cup + 1 tbsp Coconut milk/cows milk
  • 2 tbsp Butter melted
  • few drops Vanilla essence optional
  • 1/4 – 1/2 tsp Cardamom powder optional
  • Vegetable Oil to fry

Instructions

  • Mix all the ingredients together, adding more flour if necessary.
  • The dough should be soft, but not sticky.
  • Divide the dough into 4 portions.
  • Roll each dough on a lightly floured board until it is about 1/4 inch think.
  • Cut each circle into 6 triangles and fry in hot oil.
  • Fry until both sides are golden brown.
  • Remove Mandazi from oil and drain on paper towels or Mandazi are best served warm.
  • Dust some powdered sugar over the hot Mandazi (optional).Enjoy!!!

Notes

Some variations for the recipe to spruce up the flavors each time you make it:
* Add about a 1/2 teaspoon of cinnamon, ginger, nutmeg, all-spice, or cardamom to the dough or a combination of these spices to total a 1/2 teaspoon.
* Substitute pineapple, orange, or lemon juice for the milk.
* Add some shredded coconut to the dough.
* You may substitute 1 teaspoon dry yeast for the 2 teaspoons baking powder. You will want to allow the Mandazi to rise before cutting shapes and frying.
